Quiche

I have to say something here that has been a bone of contention for quite some time.  Real Men DO EAT Quiche.  Contrary to the popular saying, "Real Men Don't Eat Quiche".  Pfffft!  Maybe if the quiche was purchased at some chain restaurant I could agree however made at home with the "right stuff".....hum hum, quiche is something that is very edible.

Tonight I made a mushroom, ham and cheese quiche and here's how it went.

My Ingredients:
1 9" cake pan
1 cup diced cooked ham (leftover from yesterdays dinner)
1 small shallot minced (1 tbsp of any onion will do)
pastry dough (enough to cover your pan)  I make my own, but store ready will do fine
2 large eggs
1 cup cream or half and half (I used cream)
salt
pepper
Mozzarella or Cheddar Cheese (1 cup or enough to top your quiche)

My Method:

Preheat your oven to 400 degrees.

Butter your pan lightly and spread your dough out, lining the entire inside (see photo).  Trim any excess from the top of the pan.  Bake in 400 degree oven for 10 minutes and remove.
In a mixing bowl whisk the 2 eggs and cream until well whisked, then fold in the ham, onion, salt and pepper to taste.  OPTION:  If you want your cheese in the mixture add it now, if not see further instructions for adding it to the top of the quiche.  Set your mixture aside until your quiche dough has cooked 10 minutes, then pour the contents into the 9" pan over the lightly cooked dough.  Place it in the 400 degree oven for 20 minutes.
After 20 minutes in the oven remove the quiche (If you did not add your cheese to the mixture and want to top your quiche instead) and add your 1 cup of cheese to the top.  If you mixed the cheese into your quiche then cook an additional 15-20 minutes until golden brown.  TOTAL Cook time will be 35-40 minutes.

Here is my quiche after 35 minutes cooking time with the cheese on top.  WOOT!!  What a golden brown crust it has!
And finally my quiche plated and ready to enjoy!
